本文主要探討荷蘭時代傳入臺灣的花生，從原本純粹充作食用、維 持地力的作物，到清末成為有著多樣化用途的重要經濟物產，並和臺灣 人民的日常生活有著甚為密切之關係的歷史過程，除了透過生長環境、 品種、傳入背景以及生產體系進行論述之外，亦從花生及其副產品的產 銷網絡等面向，重建其在清代臺灣歷史中所扮演的角色。本文發現：花 生在清代臺灣漢人社會中角色之轉趨重要之因，為其利用價值不斷被開 發之緣故。同時，亦使其經濟效益不斷擴大，雖然也因為如此，使得其 在消費、商貿環境中，逐漸受到愈多因素之制肘。但不可否認的是，外 來物種的花生，其在清代臺灣漢人社會中角色的轉變，與荷蘭時代以來 的漢人移民不斷嘗試多元運用有很大之關連。 關鍵詞：
