澎湖嵵裡魚產加工之初探

為進一步地了解澎湖生活產業的今昔變遷以及產業市場的結構關係,選
擇澎湖目前較具規模的加工地區作為研究對象。本文擬以澎湖 裡水產加工
產業為例,探討目前澎湖加工產業現況。以田野調查的參與觀察(participant
observation)與深度訪談(in-depth interview)為前提,走訪 裡水產加工區,
進行相關資料之蒐集,分析重點包括澎湖水產加工發展情形、 裡魚產加工
作業方式、加工技術變遷等。
英文摘要
To further understand the changes between the past and present of the
lifestyle industry in Penghu and the structural relationship of the industrial
markets, a relatively large processing area so far in Penghu is chosen as the object
of study. This paper uses the seafood production and processing industry in Shili,
Penghu, as an example to explore the current status of the processing industry in
Penghu. Through participant observation of the field study and in-depth interview,
collection of relevant data was conducted during the visit to Shili seafood
processing area. Analysis focused on the development of seafood processing
industry in Penghu, the fish processing methods in Shili, and the changes of
processing technology.
